306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) The black coving along the wall, by the handwashing station, is peeling away from the wall and creating a pocket. There is accumulated food in the pocket, this will attract pests.
2) The exhaust canopy has accumulated grease along the edges and may drip down in food or on staff. Staff indicated that it is cleaned 1x week (Monday or Wednesday).
Corrective Action(s): 1) Immediately clean up the accumulated food and repair the coving so it is smooth and sealed to the wall, to prevent creating a pocket where food can fall into.

2) Immediately clean the exhaust canopy to remove the accumulated grease. Increase the frequency at which this is being done, as the accumulation after a week is too much.

Observation: Pipe is leaking under the 2-comp sink in the dishwashing area. Pooling water and accumulated food on the pipes and floor beneath the sink will attract and harbour pests.
Corrective Action(s): Repair or replace the leaking pipe to stop dirty dishwater from pooling on the floor.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -16C or colder; hot holding units above 60C; thermometers present and temperature recorded daily.
- High temperature dishwasher had a rinse cycle temperature of 77.9C at the plate's surface, as per max/min thermometer.
- Handwashing sink stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottle, and 3-comp sink for manual warewashing had 200ppm strength.
- Foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate and below RTE foods; and foods stored 6" off the floor on racks and platforms.
- General sanitation level is good. Improvement needed in the mentioned areas.
- No signs of pests. A professional pest company is contracted to monitor and eliminate any pests.
- FoodSafe certified staff present.
- Floor tiles in front of the deep fryers have been repair. The floor is smooth, level, sealed, and cleanable.
