Bleach sanitizer measured at 100 ppm.
Prep cooler: 4 deg. C Freezers: -19 deg. C
Dishwasher (high temp): 71 deg. C @ plate, 82 deg. C @ gauge - see thermolabel; drain plugs available for manual warewashing.
Pearls being cooked at time of inspection, measured at 91 deg. C in rice cooker
*Please mark timer for storing pearls at room temperature.
Ice scoop stored outside of ice machine
Dipper well operational and in use.
Dry storage is adequate.
No apparent signs of pest noted at time of inspection.
