Observation: Trays of raw dough labelled with 27 were stored in walk in cooler and the undersides of each of these tray are wet with liquid dripping down below on to the dough. Quat test strips indicate color change. Employee informed that blue dough trays are received from supplier provided by head office and delivered back to supplier when they are used.
Corrective Action(s): Hold tag placed on trays of dough. Provide information that the liquid on the underside of these trays is not sanitizer, otherwise food must be discarded due to chemical contamination. Date to be corrected: immediately
