Observation (CORRECTED DURING INSPECTION): Big stock pot of chicken broth prepared and is not cooled properly. Food measured at 55C, Operator said that it will be cooled to 40C before moving it to the cooler for cooling to less than 4C
Corrective Action(s): Cool hot foods from 60C to 20C within 2 hours and from 20C to 4C within 4 hours in the cooler- stir hot food frequently, use an ice wand, portion it into small batches to cool the food rapidly

Observation: - Box of ginger, one box of onions and open of salt is stored on the floor under handsink
- Several food items were left uncovered in the top inserts in prep cooler
Corrective Action(s): - Store all food boxes off the floor, store opened bags of food items in pest proof containers.Remove items from below to the handsink and store in proper food storage area to prevent contamination. Provide adequate storage shelves for dry/bulk food storage
- Keep all food items covered in prep cooler

Comments

- All handsinks - two in kitchen, one in front service area and in washrooms are supplied with hot and cold running water, liquid soap and paper towel.
- All coolers - prep cooler, sliding glass door cooler, display cooler at front and measured at less than 4C.
- Upright freezer and chest freezer are measured at -18C.
- Sanitizer solution in spray bottle is measured at 200ppm chlorine residual.
- High temperature dishwasher is measured at 72C during final rinse at the dish level.
- No evidence of pest activity is noted at the time of inspection.
- General sanitation is satisfactory.
