Follow up inspection conducted.
A new waterproof memory thermometer available to monitor final rinse temperature at plate level for high temperature dishwasher. Showed operator now to measure the water temperature at plate level.
No rodent activity noted. Live traps setup within kitchen area.
Clean for shelving units, behind the cooking area, underneath the 3 compartment sink, and grease trap is completed. Ensure greasy area is cleaned routine to prevent build-up.
