Observation: - Thermometer lacking from fridge/freezer behind handsink in kitchen
Corrective Action(s): - Supply thermometer to fridge/freezer and ensure temperature is monitored.

Comments

- Handsinks were supplied with hot and cold running water, liquid soap and paper towel
- Observed frequent handwashing by foodhandlers
- Coolers were operating at 4C or colder
- Freezers were maintaining food products in a frozen state
- No hot holding. Food items are made when ordered.
- A supply of clean scoops present for gelato
- High temperature dishwasher operational. Temperature at dish surface: 71.1C. Ensure dishwasher checked at least daily via gauge to ensure it is operating at required temperature.
Note: Required temperature at gauge for rinse cycle is 82C
- Bleach sanitizer solution present in spray bottles within food service area and kitchen. Concentration of solution in all spray bottles tested was 200ppm chlorine.
- No signs of pest infestation noted at time of inspection. Pest control contract in place within building. No traps currently in place. Recommend placing traps (eg. glueboards) for monitoring.
*Ensure lids on dry goods bins are kept tightly sealed
- Operator present and has completed Foodsafe level 1
- Staff/public washroom maintained and supplied with liquid soap and paper towel
