203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Observed two large whole cooked roasts in walk in cooler (large enough to just fit the 25L container that each was stored in). These roasts are too large to be able to cool properly within the required times (ie 60C to 20C in 2hours or less then from 20C to 4C or less in less than 4 hours).
Corrective Action(s): Before roasts are put into the cooler they must be cut down into smaller pieces or even fully sliced.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Hand wash station in the prep area lacked paper towel and the motion activated soap dispenser was not fully functional. Hand was station near dish washing area lacked accessible soap (dispenser may have been faulty)
Corrective Action(s): Repair/replace broken soap dispenser(s) and restock paper towels to allow staff to wash hands properly. Due: immediately.

209 - Food not protected from contamination [s. 12(a)]
Observation: (1) Beam in ceiling above sandwich prep cooler closest to the deep fryers was badly worn and drywall, paint, etc was flaking off and could land in food.
(2) Light cover missing above the oven area.
Corrective Action(s): (1) Repair or cover this area to prevent the contamination of food and to make it easily cleanable. Due: Sept 29, 2017
(2) Replace light cover to protect it from being bumped and to prevent glass from getting everywhere if a bulb breaks. Due: Sept 29, 2017

- Floor and wall upgrades upstairs in food storage area is mostly complete and looks significantly better. New bar tap area just installed and old wood cabinet removed.
- Upright freezer in prep area off and is being replaced - please clean out all food debris inside this unit to prevent attracting pests.
