Make sure to keep the lid of prep cooler closed when not making food. Base of unit less than 4 C.
Make sure to change water for sushi knife use every two hours as discussed. You may also use ice to keep water below 4 C.
Make sure to remove cardboard, boxes and containers from premises on daily basis to minimize clutter and space.
