Observation (CORRECTED DURING INSPECTION): Utensils were being stored in containers of Quat sanitizer. As per manufacturer's instructions, all sanitized surfaces must be allowed to air dry. This is to avoid potential contamination of food with the sanitizer.
Corrective Action(s): Discontinue the practice of storing utensils in Quat sanitizer. Utensils must be cleaned after each use or stored in ice water and cleaned every 2 hours.

Observation: Stand-up cooler is maintaining ambient temperatures of 7C (~45F). Ice build up observed. Built-in thermometer reads 34F.
Corrective Action(s): Defrost and repair/adjust cooler so it is able to maintaining ambient temperatures of 4C/40F or less. Ensure the built-in thermometer is capable of measuring the temperature accurately.
