Observation: Cooler door handles and tracks need cleaning. Shelves need cleaning. Flour bins need cleaning. Shelves need cleaning.
Corrective Action(s): Clean up noted areas and other. Do Not Use Foil to substitute cleaning. Ensure these areas are under improved state of sanitation for next scheduled inspectio.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Shelving units and some accessory counters not smooth, impervious and/or easily cleanable. These include, but are not limited to the following:
- shelves - particle board exposed and falling apart or flaking onto other work surfaces or equipment.
- counters and shelves are covered by foil, because they are not of suitable design and/or not being maintained.
- other exposed old wood surfaces not adequately cleaned.
Corrective Action(s): Replace old wooden or deteriorated shelves; Avoid particle board even if it is painted as it is very suseptable to flaking off and similar damage. Develop a plan to replace based on high to low priority. Give priority to most deteriorated.

Observation: Parts of the premises falling apart. Floor is peeling exposing the concrete and food and debris too easily accumulates in worst areas i.e. under food prep and dishwash areas. Regular clean-up is affected because of floor condition.
Corrective Action(s): Develop a written plan and timeline to remediate floor properly such that general sanitation can be maintained. Review plan at next scheduled inspection.

Comments

As equipment is replaced and premises updated choose items that will promote easy cleaning and long-term durability. Recommend replacement with shelves and coolers and counters that are on wheels to promote easier premises cleaning and maintenance.
Noted: some minor painting performed. Some minor electrical outlets replaced. Back area behind freezer somewhat cleaned.

Temperature controls OK.
