Comments

Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers at all staff entrances and at various locations throughout the facility
-Staff washrooms are also fully supplied for hand hygiene; staff change areas are clean and well maintained
o Hand washing was observed during the inspection
o Gloves were used appropriately - one specific, repetitive task at each station
o Operators had clean clothing for food preparation
-Lab coats, hair nets, beard nets and steel toe are worn by staff and workers inside the plant

Storage Temperatures
o Cold holding Coolers are below 4C; temperatures are monitored, alarms are tracked
o Cold holding Freezers are below -18C

Food Processing and Food Protection
o Specialized Food Processing - fermentation for sourdough - process is being monitored in proofing room
o Approved Food Source - Ingredients from an approved source, Roger's Flour
o Food Storage - Food is stored in covered containers or raised pallets.
-Products with allergens (e.g. sesame) are being produced and handled only at end of week after other products without allergens

Maintenance and Sanitation
o Storage of chemicals is separate and away from food
-3 compartment sink is used for cleaning and washing utensils and bowls
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
-Final product is both bagged and packaged in boxes
-Ingredients come in paper packaging and plastic wrapping; no noticeable signs of penetration by pests or damage by transport
-Both ingredients and final product packaging are inspected during production
o Pest control - Operators have a pest control contractor in place
-Some signs of dead and live Indian meal moths around the silo area; no active signs of infestation.
-Operators confirm recommendations from pest control are being followed; interventions such as fogging is done regularly as a means for control
-Production does not occur and food is not present during interventions
-Light traps are evident and places throughout the facility with focus on entrances
-No signs of rodents or other crawling pests at the time of inspection, recent pest control inspection report shows no activity.
o Sanitation Plan - Operators have a sanitation plan in place
-Deep clean of facility is done weekly. Routine cleaning at stations are done daily/end of shift

Administration
o Staff is certified in food safety
-Secured entrances and exits

Overall facility is clean, well maintained and monitored.

*New rack storage area for maintenance equipment is in good working condition. Area is separate from food storage and is only used for storage of extra equipment and machinery.
No issues, approval given for this additional area.
