Comments

- Temperature Control: No concerns noted this date. Temperature monitoring is being conducted. Temperature logs are to be kept on site for review.
- Mechanical Dishwasher: High Temp - Refer to Violation Notes.
- Manual Dishwashing - 2 Cmpt sink:
- Ensure all food contact surfaces are cleaned and sanitized after use or on a timely manner. (~3-4 hours - tongsspatulas, etc/)
- Wiping cloth storage: Quats - OK.
- Cloths are to be kept completely submerged in a sanitizer at all times. Monitoring required. Solution is to be changed on a routine basis. Use 200 ppm Quats solution and make as per manufacturer's instructions. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Dipper Well: Noted and functioning.
- Food Storage: As discussed, deteriorating food storage containers are to be removed from premises. Items are to be kept in good repair.
- Sanitary Facilities: Ok.
- Chemical Storage: Ok.
- Staff Hygiene: Discussed.
- Structurally: No concerns.
- Sanitation: Ok. Facility is to be kept clean and organized. Store all items in designated areas. Cleaning of "hard to reach" areas (behind/under equipment) is to be conducted routinely.
- Pest Control: Monitoring is required to be conducted. No signs noted this date. Discussed pest control measures.
- Garbage, Recycling and Composting Disposal: All items are required to be stored in covered, rodent proof containers.
- Ice Machine: Cleaning and disinfection discussed. No concerns.
- Food Safe Trained staff noted on site!
