Follow-up inspection:

-After discussions with the owner the 3-compartment middle sink will serve also for washing hands. This middle sink is to be kept clear for that purpose -no storage of dishware in the middle sink:
The middle compartment will serve for:
-rinsing dishware as part of the manual dishwash method
-handwashing with the paper towels and soap dispensed available

Handwashing will be the priority at this middle sink over rinsing dishware

-Move the soap dispenser closer to the 3-compartment sink and remove the empty dispenser no longer used.

Operator will extend the preparation table where the previous handsink was located

-ensure to notify me should before you plan on any future structural changes to the facility
