Observation: - Numerous containers of food stored in walk-in cooler were not covered
Corrective Action(s): - Ensure all foods in walk-in cooler are covered with a tight fitting lid or food grade wrap so that they are protected from contamination. [Date to be corrected by: 17-Jun-2021]

304 - Premises not free of pests [s. 26(a)]
Observation: - Mouse droppings noted in the following areas:
- on undercounter shelving across from point of sale counter (No food products on this shelving)
- on lower shelf of prep table in back area (No food products stored on this shelf)
- on floor along wall accross from bathrooms
- on floor under 2 compartment sink
Note: The only food which was not stored in the coolers, freezers, or hot holding units, was uncooked rice which was stored in a pest proof bin. There was no evidence of droppings or mice having been in the food product.
Corrective Action(s): - Thoroughly clean all areas noted above to remove droppings. Disinfect areas with bleach solution. To be completed today. Continue to monitor for any further activity (droppings) and clean up immediately if noted.
- Retain the services of a qualified Pest Control Technician to address the rodent problem. Follow recommendations of the Pest Control Technician. Provide pest control service report and contract to undersigned. [Date to be completed by: 22-Jun-2021]

Observation: - Holes noted in wall in both washrooms where coving is peeled away from the wall
- Hole present in wall in front of dining area where coving is peeled away
- Back hallway has boxes stacked on floor
Corrective Action(s): - Repair all holes and replace coving.
- Remove stock from hallway and store on shelving. Add additonal shelving if needed. Keep hallway clear. [Date to be corrected by: 22-Jun-2021]

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: - Flooring which was replaced under rational ovens buckled and was removed. Grime, residue, moisture and soiled cloth present under rational ovens.
Corrective Action(s): - Clean area under rational ovens removing all grime, residue and debris.

- Flooring will need to be repaired so that it is smooth, impervious, durable and capable of being cleaned and maintained in sanitary condition.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: As noted in code 306, flooring under rational ovens, which was previously replaced, buckled and was removed. Currently there is not suitable flooring present under ovens and it is not able to be effectively cleaned/maintained in sanitary condition.
Corrective Action(s): Repair/replace this section of flooring under ovens so that it is durable, impervious and washable. Operator reported he will be placing a metal plate. Ensure elevation is level/continuous with existing flooring in premises so that there are no gaps where food or devbris can collect.

Observation: - Thermometer in line cooler was broken

Comments

- Handsinks in front service area and back prep area and in staff/public washrooms supplied with hot and cold running water, liquid soap and paper towel.
- Coolers were operating at 4C or colder:
- Walk-in cooler 3C
- Line cooler 4C
- Beverage cooler 4C
- Freezers maintaining product in a frozen state
- 2 door reach in freezer -18C
- Single door freezer -18C
- Food in steam table maintained at >60C. Cooked rice measured 65C
- Dishwasher operational and 50ppm chlorine detected in rinse cycle
- Wiping cloth kept in bleach sanitizer solution with concentration of 200ppm. Chlorine residual present on cloth which was in use.

Covid Safety Protocols:
- Covid Safety Plan not present on site. Operator to email copy to undersigned by 18-Jun-2021. Ensure plan is available on-site and has been reviewed with staff.
- Minimizing of tables and distancing of tables to ensure customers are seated a minimum of 2m apart was not in place initially at the time of the inspection. Note: There was only one customer seated/present during inspection. Signs were placed on tables at the time of the inspection to indicate which ones were not in use to ensure if/when customers are seated, they are 2m apart.
- Alcohol based hand sanitizer present for customer use at point of sale counter
- Masks were worn by Operator and staff member.
- SANI + peroxide disinfectant cleaner present for use on high touch surfaces.
