Routine Inspection:

Kitchen:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Walk-in cooler, stand up cooler, cooler drawers, and prep coolers maintained at or below 4 degrees Celsius.
Walk-in freezer and small freezer maintained below -18 degrees Celsius.
Hot holding maintained above 60 degrees Celsius.
- Prep sinks equipped with hot/cold running water.
- General food storage practices good:
Foods covered and protected from contamination.
Foods stored at least 15 cm (6 inches off the floor).
Cold, freezer and dry storage organized.
- Concentration of QUATs sanitizer in all spray bottles = 200 ppm.
- Low temperature dishwasher sanitizing with 100 ppm chlorine.
- Ice machine maintained in a sanitary condition. Ice scoop for ice machine stored in designated container.

Pass-thru:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- Concentration of QUATs sanitizer in spray bottle = 200 ppm.
- Temperature of ice cream freezer = -18.8 degrees Celsius.
