- Surface sanitizer solution available in buckets and spray bottles at 200 ppm (Quats)
- High-temperature dishwasher reached 73C at dish surface during rinse cycle
- All coolers were maintaining temperatures at 4C or colder
- All freezers were maintaining temperatures at -18C or colder
- All hot held items in kitchen were measured to be at 60C or hotter
- Accurate thermometers available for monitoring temperatures
- Buffet items: Hot held items in buffet line were measured to be between 50C and 68C. Turnover of food is fast, items are served up within 2 hours. Cold held items in buffet line were measured to be at 4C or colder.
