Observation: * Food was left outside the cooler and no longer in edible and had to be discarded; food must be kept in proper storage and covered properly; there was a lot of food equipment stored improperly that can lead to cross contamination
Corrective Action(s): * Ensure food stored properly in storage areas and covered properly; reorganize all storage areas too so that food equipment stored properly and in sanitary manner

Observation: * Gap still under back door area that requires immediate repair when using screen door; this was discussed on previous inspections and requires immediate repair

Observation: * Build up of grime/debris found through out kitchen and storage areas; operator told to clean/sanitize all food equipment, counters, floors, baseboards, etc., to remove the filth and build up.
Corrective Action(s): * Ensure ALL areas properly cleaned/sanitized thoroughly through out kitchen and storage areas; remove all build up of grime/debris/filth and maintain in sanitary condition

* Dishwasher final rinse was 50 ppm chlorine residual at plate surface
* Cold-holding units were 4'C/40'F or colder
* Freezer units were -18'C or colder
* Owner/operators have food safe level 1 up to date
* Hand washing stations have liquid soap and paper towels
* Sanitizer was available and at 200 ppm chlorine residual in buckets to store wiping rags
* Note: A lot of cleaning to be done through out kitchen and storage areas
* Note: Reorganization to be done to reduce risk of cross contamination
* Note: Renovation plans to be submitted this week for proposed renovation that must be done in order to continue operating-- storage areas have expanded since beginning operation and storage no longer acceptable capacity; operator to submit final copy of floor plans for review
* Follow up inspection to be done early next week
