Comments

Following corrections have been made:

- Ice machine is clean; no mould observed.
- Floor looks clean in general - ensure to clean hard-to-reach corners and junctions; operator stated that the information will be relayed to the janitor.
- Raw eggs stored at the bottom shelf in walk-in cooler.
- Chlorine sanitizers in buckets (located throughout the kitchen) tested at 200ppm chlorine with test strips.
- Chlorine sanitizer in spray bottle available next to rice roll machine; time tracking sheet available to check off sanitizing schedule every 2 hours for the machine - this task to be done by sushi man.
- Yellow rubber gloves available for any food prep. Pink rubber gloves to be used for dishwashing only.

Following item needs correction:

- Reusable white gloves are now being dried on rack in the back storage room. Do not store dirty items (garbage, mops, mop buckets) when drying the gloves in the storage room. This space can be used ONLY if there are no cleaning equipment/ chemical and any other items that can possibly contaminate the gloves. It is recommended to machine dry the gloves off site if possible.

Note: Flooring for walk-in cooker and freezer discussed with manager as they are wearing out and rusty. They are planned to be covered with aluminum lining soon.
