Observation (CORRECTED DURING INSPECTION): Noted cloths stored in sanitizer solution which was mixed with soap.
Corrective Action(s): Do not mix soap with sanitizer solution. If cloths are greasy or dirty, then use a new clean cloth or clean the cloths separately with soap and water, rinse thoroughly so that all the soap is removed then store in the sanitizer solution.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): New hand sink by the sandwich service area did not have soap. Operator placed soap at hand sink at time of inspection. Wall mounted soap dispenser on site but still has to be installed.
Corrective Action(s): Ensure all hand wash stations have soap, paper towel, hot and cold running water readily available at all times.

Observation: Noted bulk breads are still exposed.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Layout changes and installations have been made to the premises without health approval:
- Walk in cooler upstairs has been removed and the sandwich preparation area has been added to the end of the deli counter. A hand sink is located in this new food preparation/handling area. A new refrigerated olive bar with sneeze guards and soup wells have been added to the retail part of the store. No soup available at time of inspection.
- Hand sink has been installed without floor plan approval and proof of plumbing permits
- Broken tiles noted in the new sandwich preparation area. Operator advised that new tiles are being ordered.
- Access to the existing two compartment sink on site appears tight (approx 28 inches of clearance)
Corrective Action(s): Submit updated floor plans for health approval within 3 business days.

Comments

All previously approved hand wash stations in the premises were equipped with soap, paper towel, hot and cold running water
All coolers 4C or less (deli display cases, open face coolers, sandwich prep cooler with inserts, walk in cooler downstairs...etc)
Bulk cheese containers stored in retail open face cooler unit at 3C. Covering containers appeared clean with self closing lids. Scoops to dispense cheese of adequate length to prevent contamination. Ensure this area is monitored by staff.
Freezers less than -18C (walk in downstairs, reach in retail freezers...etc).
No hot holding available at time of inspection. Soup previously dispensed by staff. Self serve soup to be at 60C and to have self closing lids with ladels of sufficient length.
General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection. Back door was closed at time of inspection.
200ppm quat available in spray bottle to be used for the cheese grater. Cleaning procedures for cheese grater were posted.
Reviewed cleaning/sanitizing procedures for meat slicers. Staff said that meat slicers are taken apart and washed/sanitized once every 4 hrs.
Refrigerated delivery trucks no longer at premise. They are stored at the warehouse.
Note: Premises was approved with a two compartment sink only. Drain plugs and bleach available at two compartment sink. Layout changes with the addition of refrigerated olive bar and self serve soup is not a major change to the existing approved operation. Should the changes create an increased amount of equipment for warewashing, upgrading to a three compartment sink or two compartment sink with commercial dishwasher might be required. Do not make any changes or installations without floor plan submission and health approval first.
