Observation (CORRECTED DURING INSPECTION): Observation: foods (breaded meats) stored in 3-door Quest prep cooler noted at 8 deg. C. Foods stored in 8-door cooler under grill noted at 10-15 deg. C (meats, seafood.)
Correction: Foods were moved to the walk in cooler to be maintained at 4 deg. C or below. Potentially hazardous foods must be stored at 4 deg. C or below.

Observation (CORRECTED DURING INSPECTION): Observation: high-temperature dishwasher sanitizing cycle reached 60-65 deg. C at the plate, which is not effective for sanitizing.
Correction: 71 deg. C must be achieved at the plate for adequate sanitizing. Dishes must be cleaned at low tempearture using a chlorine santiizer at minimum 50 ppm. Operator has suggested this iterim solution while unit is being serviced/replaced. See correction order.

Observation (CORRECTED DURING INSPECTION): Observation: Handsink next to walk in cooler did not have paper towels.
Correction: Ensure to equip handsink with hot/cold running water, soap, and paper towels.

-Glasswasher reached 72.5 deg. C at the plate.

-Iodine washer (25 ppm)

-No signs of pests at the time of inspection.

Note: EcoLab technician arrived on-site and noted a broken fuse in dishwasher. Repair/replace fuse. Technician verified chlorine residual at 50 ppm. Provided test strips for staff.
