Observation (CORRECTED DURING INSPECTION): 1) Tray of unsalted butter stored at room temperature since Wednesday. Label states to keep refrigerate as this is a cold potentially hazardous food.
2) Front insert cooler measuring 5-7C. Keep the lid of the insert on, otherwise the heat from the grill will increase the temperature of the food. Discard the cooked pork as they measured 8C.

Observation: 1) Pink wiping cloths left ontop of the front kitchen cutting board. Wiping cloths need to be stored in a sanitizer solution.
2) Front cutting board is worn out and needs to be replaced.
Corrective Action(s): 1) Store wiping cloths in sanitizer solution
2) Replace cutting board as it is severely discolored with lots of knife marks.

Observation (CORRECTED DURING INSPECTION): 1) Back dishwasher maintained 0 pppm chlorine solution after 8 attempts. Afterwards, 100ppm chlorine was reached. Ensure dishwasher is checked regularly to maintain sanitizing concentration.
2) Front glasswasher is maintaing 0 ppm Iodine solution. Ensure equipment is checked with test strips for sanitizing solution. 12.5 - 25 ppm iodine is needed for glass washer.
Corrective Action(s): 1) Check dishwasher with test strips daily to ensure sanitizing concentration is reached. 50-100ppm chlorine solution is needed. Do dip test strips into the foam as this will create an inaccurate reading.
2) Wash all glasses in the back dishwasher until glasswasher maintains proper sanitizing concentration.
