Specify how they're made (cooking, handling, etc), how they're cooled, how they're prepared, and how they're stored. Detail critical control points, and make sure to include all times and temperatures. For each critical control point, ensure you include monitoring actions and corrective measures.

Observation: Display cooler not maintaining 4C at time of inspection. Top measured a minimum temperature of 10C, while bottom reached a minimum of 7C.
Corrective Action(s): DO NOT USE until EHO has verified the repair.

Comments

Display cooler in operation directly contrary to instructions on your last inspection report - EHO has not been on site, and has not been contacted as requested to inspect repaired cooler.
Repaired cooler reading 10C (7C on digital display). Staff on site adjusted the "set" temperature to 3C (from 4C) however machine did not reach adequate temperature.

Do not use cooler until reinspection has occurred.
