Comments

-Handsinks maintained with hot & cold running water, liquid soap and paper towel
- 200ppm QUAT sanitizers preset at multiple locations
- 100ppm chlorine achieved at low temp. dishwasher
- 100ppm chlorine achieved at glasswasher
-Hot holding units- >60 oC
- Coolers <4C and freezers <-18C withe exception of noted line cooler
* Temp. log is in active use- increase the frequency of temp monitoring for line coolers (at least 4 times per day).
- No signs of pest activity
*General sanitation- under equipment and around dishwashing area require attention.
