Observation (CORRECTED DURING INSPECTION): Rice observed stored at room temperature on the counter. Operator stated rice cooled rice from previous day. Internal food product temperature 29 degrees C.
Corrective Action(s): Discarded. Ensure rice is cooled properly then stored at or below 4 degrees C or kept hot at or above 60 degrees C.

Observation (CORRECTED DURING INSPECTION): At the time of inspection no 100ppm bleach sanitizer solution available for use.
Corrective Action(s): This is a recurring issue. Ensure a 100ppm bleach or 200ppm quats sanitizer solution is available for sanitizing food equipment/contact surfaces.

Observation:
- Scoops and bowls used to dispense dry products stored directly in food products.
- Towel used to cover pasta in inserts at drawer cooler.
- Trays of pork and sausages and container of uncovered carrots observed stored on the floor in the walk in cooler.
Corrective Action(s): Ensure all food is protected from contamination at all times. Correct immediately. Store all dispensing utensils outside of food product and in a sanitary manner. Do not use cloth to cover food products. Store all food at least 6" off the floor.

Observation: Grease accumulations observed on the exhaust canopy. Some food debris accumulations observed inside the lower section of the preparation cooler and gasket grooves.
Corrective Action(s): Thoroughly clean the above noted areas. Ensure food premise is maintained in a sanitary condition. Correct by April 12, 2018.
