Observation (CORRECTED DURING INSPECTION): Spilled liquids are frozen to the bottom of the double door freezer.
Corrective Action(s): Bottom of double door freezer requires cleaning to removed the spilled food that has frozen on the bottom. Premise does not have any other freezer, and operator will need to rent an additional freezer to store the food or transfer everything to the coolers while the double door freezer is cleaned. Operator started transferring the food to the coolers in preparation for the cleaning of the freezer.

Observation (CORRECTED DURING INSPECTION): Cloth towel used for drying hands.
Corrective Action(s): Observed a large cloth towel hanging above the hand sink, that the operator uses to dry her hands after hand washing. All food handlers shall dry their hands with disposable paper towels only. Do not use cloth towels as they can spread bacteria. Operator removed the cloth towel at time of inspection.

General observations:
Coolers were 4 degrees Celsius or less.
Freezer was -18 degrees Celsius.
Hot holding unit was over 60 degrees Celsius.
Coolers and freezers were equipped with thermometers.
Food storage practices are satisfactory.
Organization of storage areas is satisfactory.
Hand sink stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
Food handler hygiene is satisfactory.
General sanitation is fair.
Work counter has been repaired and the surface is not smooth, impervious to moisture and easy to clean.
Operator is in the process of replacing all fluorescent light fixtures with single-piece LED light fixtures.
Chemicals are stored in a safe manner.
No signs of pests.
