Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Ice machine in back preparation area observed with pink and black mold build up. Manager turned off the ice machine during time of inspection.
Correction: Discard all ice in the ice machine. Clean and sanitize the ice machine with 100 ppm bleach solution (or as per manufacturer instructions) to remove mold build up. In the meantime, purchase bagged ice from an approved supplier or use an alternative ice machine on site. Ensure the ice machine is cleaned and sanitized more frequently as part of the regular cleaning schedule.
