Cooling units OK - less than 4 C. **Make sure to minimize the amount of time the clam shell lids on the prep cooler stay open for rush period.
Hot holding pasta sauce above 60 C.
Hand wash stations ok.
General cleanliness pretty good.
Quats at sinks - water temp too low to accurately measure. Noticed when re-filling sink the concentrate was mostly empty in the feed tube. Make sure to fully prime the system prior to filling either the sink or the spray bottle with solution. Also recommend the sinks get tested/audited on regular basis to ensure the system is actually working and solution comes out at 200 ppm. **Main dispenser is fed by cold water only and the minimum water temperature to accurately test for sanitizer should be 65 F (a little less than luke warm).
