Observation: 1) Few uncovered foods observed from the walk-in cooler (i.e. whipping cream bucket, veggie mixtures) and in the front cooler (unfinished cake pops at front).
2) Cooked potatoes being cooled were placed directly on the drain board by the prep sink. Operator had advised the surface had been sanitized.
Corrective Action(s): Ensure to have all foods covered with and contained in food grade materials. Place potatoes on a pan for cooling.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied.
-Refrigeration temperatures satisfactory.
NOTE: Cake display cooler at front had ambient air temperature >4'C for the top two shelves. Fruit cakes stored at the bottom shelves (4'C) for now. OK. Ensure to obtain a thermometer and place on the top shelf, as the temperature readings from top and bottom shelves are different by 4-5'C.
-200ppm chlorine solution available in a spray bottle. Ensure to label the second bottle for the cake decorating section as well.
-Dishwashing sink equipped properly. Bleach available on site.
-Washroom handsink satisfactory.
-Time monitoring system in place for all Patties. Records checked at this time. GOOD!
-Traps in place. Professional pest control company contracted. Kwality Pest Control.
-No evidence of pest activity observed at this time.

Boiled potatoes being cooled at room temperature. Potatoes were at >40'C at this time. Operator had advised these were boiled <30minutes prior to the inspection, and normally placed for <1hour for cooling --> peeled --> stored in walk-in cooler. OK. Ensure to monitor temperature using probe thermometer.

General sanitation of the facility satisfactory, but could be improved by decluttering and cleaning hard to reach areas on a more regular basis.
