Observation: Fruit flies were observed throughout the facility including the corners and along the walls. These flies could cause potential food contamination.
Corrective Action(s): Discuss the issue with your pest control company and implement adequate control measures. Keep the kitchen door closed to prevent their entry.

Observation: Kitchen side door was left open for air circulation. This could be a potential entry point for rodents and fruit flies.
Corrective Action(s): Keep the door closed at all times. It is recommended to install screen door instead.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Low temp mechanical dishwasher was not dispensing chlorine. Operator replaced the bleach bucket with new bleach bottle. 200ppm chlorine residual observed during rinse cycle. Operator stated that the dishwasher will be serviced tomorrow.
*REPEATED VIOLATION*
2. Walk in freezer was measured at -10C but had thick ice build up on the floor as well as the ceiling. Icicles were observed on the ceiling and trays. Door seal is worn out. It seems like the floor is not made up of impervious material and retaining moisture. Operator stated that the freezer will be repaired in 2 months.
Corrective Action(s): 1. Contact your technician and have the dishwasher serviced regularly.

2. Repair the walk-in freezer and ensure that it is in good working order.
Ensure that the walls, ceiling and floor of walk in freezer is made of smooth, impervious (waterproof) and easy to clean material.

Comments

Routine inspection conducted at the food facility.

Temperature:
- All coolers including front display coolers & walk in cooler were recorded at a temperature of 4C or less.
- Walk in freezer recorded at -10C.
- Temperature logs were maintained.

Storage:
- All food products were found either in original packaging or properly covered.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash stations were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- 200ppm bleach solution recorded in sanitizer pail.
- 2 compartment sink used for manual dishwashing of large pots.
- Low temp mechanical dishwasher used. See violation above.
- Kitchen hood was maintained in good condition.

Pest Management:
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate.

Please note that the dishwasher and walk-in freezer have ongoing issues discussed during previous routine inspections. Ensure that both equipment are serviced regularly and maintained in good working order. Failure to comply may result in enforcement action.
