Routine Inspection:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers (walk-in, juice, milk) maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
Walk-in freezer and chest freezer temperatures satisfactory.
Hot holding maintained above 60 degrees Celsius (140 degrees Fahrenheit).
- General food storage practices good at the time of inspection:
All food items stored at least 6 inches (15 cm) off the floor.
All food items covered and protected from contamination.
Foods are organized in storage areas (cold, frozen and dry).
Prepped foods are dated and time tracked.
- 3-compartment sink available for manual warewashing. Sink plugs available.
- Concentration for QUATs sanitizer at dispenser and in all buckets = 200 ppm.
- Sanitizer in buckets changed every 2 hours.
- All equipment maintained in a sanitary condition.
- Ice machine maintained in a sanitary condition. Ice scoop stored in designated container.
- General cleanliness good at the time of inspection.
- No signs of pest activity at the time of inspection.
- Staff observed to be wearing hair nets.
