Observation:
The wooden platform the microwave sits on has exposed wood. The wood will absorb food and is not cleanable.
Corrective Action(s):
Paint the platform with a light color so the wood is sealed and cleanable.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer -17C; hot holding units above 60C; and thermometers present.
- High temperature dishwasher rinse cycle was 71C at the plate's surface, as per max/min thermometer.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer solution used. No solution made at time of inspection, but bleach present.
- Disposable gloves were being found to be discarded after completion of a task and starting a new one.
- All foods stored in food grade containers; covered; stored in groups with raw proteins below RTE foods; and 6" off the floor in cupboards or on shelves.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. The exhaust canopy is clean, ensure to have it cleaned by a professional company on a regular basis to remove any built up grease in the vents leading outside. If this is not done, it is a fire hazard.
- No signs of pests.
- FoodSafe certified staff present.
