Hand wash station supplied with liquid soap and paper towels in dispensers. Paper towel was a little difficult to get out, please fix. Operator had a second paper towel roll ready on the side, thank you. Cleaning has improved in this facility, great job. Some areas could still need some work including surfaces, counters, underneath racks in coolers. Majority of items inside walk in cooler (except for pasta) was covered during the inspection. Operator replaced extra lids on uncovered pasta, thank you. Line coolers have some items (in bottom) that were not covered (cilantro). Please ensure all items are covered and protected or kept in sealed containers. All flour stored on racks in dry storage area. Dry storage area could use some light to aid cleaning. Dough prep area and mixer was appeared to be in clean condition and good repair. Prep counters in good repair and clean condition. Pest control: snap traps with bread as bait. No bait is recommended. Please replace with appropriate traps, consult with pest control. No signs of pests at the time of inspection. Continue to inventory all items at the back including boxes and unnecessary items.
