Observation (CORRECTED DURING INSPECTION): Cooked chicken and noodles were being kept out at room temperature.
Corrective Action(s): Move all foods into the cooler. After lunch and dinner rush, all PHF's must be stored inside the cooler.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dirty knives are being stored on the knife rack. Meat slicer has not been cleaned. Prep coolers require a thorough cleaning, inside and out.
Corrective Action(s): Clean all equipment and food contact surfaces as discussed.

Observation: Both the front and back hand sinks were blocked during the inspection. Dishes were being stored in the front sink and the back one had a cutting board covering it.
Corrective Action(s): Hand sinks must be accessible for use at all times.

Observation: Handsinks are blocked and none of the staff were observed washing hands.
Corrective Action(s): Ensure that all handsinks are accessible and available for handwashing at all times. Always wash hands with soap and water before handling food.

Observation: Not enough sanitizer bottles are available for use. Accell bottles are being used to store bleach solution. This is not acceptable.
Corrective Action(s): Purchase new spray bottles for the sanitizer solution.

Observation: Cloths are being used to cover noodles. Garbage bags are used to cover foods. Foods in the coolers are stored without being covered.
Corrective Action(s): Stop using cloths for covering noodles. Use food grade containers to store foods. Cover all foods in the coolers.

Observation: The front and back kitchen require a thorough cleaning. The exhaust hood is overdue for servicing. The shelves in walk-in cooler require cleaning. Remove all cardboard boxes that are not in use as discussed.
Corrective Action(s): Clean the front and back kitchen thoroughly. Clean under the stoves, sinks, inside and outside each cooler. Clean all hard to reach areas.
