Observation (CORRECTED DURING INSPECTION): QUAT solution in spray bottles had concentration >400ppm. All bottles diluted to 200ppm at this time.
Corrective Action(s): Ensure to prepare correct concentration of QUAT for each bottle. Test using the test strips provided- also available on site. Ensure all staffs are trained regarding this.

Comments

Routine inspection conducted:
-Handwash stations adequately supplied.
-Refrigeration temperatures satisfactory; Hot-holding temperatures satisfactory.
-Upper part of prep cooler by the kitchen entrance had ambient temperature ~7-8'C. Facility about to close at this time. All to be discarded.
NOTE: Ensure this part of unit is kept at or below 4'C at all times. Keep the door closed during less busy hours. Continue to store small amount of food each time.
-Temperature monitoring system in place. Records kept upto July.
-High temperature dishwasher achieved 74.6'C at the plate level after final rinse.
-General food storage practice satisfactory.
-No evidence of pest activity observed. Washroom handsinks satisfactory.
-Left over soups discarded at the end of each day.
-Ventilation hood maintained. Next service in Jan 2017.
-General maintenance and sanitation satisfactory, but sanitation level can be improved by cleaning hard to reach areas on a more regular basis.

NOTE: Backdoor left open at this time for loading/unloading products. Normally kept closed. OK. If to have the backdoor open for ventilation purposes, a proper screen door should be installed.
