Observation (CORRECTED DURING INSPECTION): 1. 3 1/2 flats of eggs noted at room temperature. Staff indicated eggs were out for 15 mintues. Temperature of eggs noted at 13.9oC (top flat); 12.9oC (2nd flat); 9.9oC (3rd flat); 14oC (bottom flat). No time tracking available.
2. A container of blanched/steamed potatoes noted at room temprature. Staff indicated it will be cooked when needed.
Corrective Action(s): Potentially hazardous foods must be stored in cooler at 4oC or less at all times. If operator wants to store potentially hazardous foods out at room temperature, a maximum of 2 hours is allowed, only with time tracking implemented.
