Observation (CORRECTED DURING INSPECTION): The ice-machine had mold growth along the edges. The scoop was stored directly on on an dirty shelf.
Corrective Action(s): Stop the use of the ice-machine. Staff began cleaning the ice-machine at the time of the inspection. Clean the ice-machine routinely and ensure the water tray is also cleaned and sanitized. The scoop was taken to the ware washing sink at the time of inspection. Keep the scoop stored in a clean and sanitary container. Date to be corrected by: today.

Observation: The chemical dishwasher dispensed no detectable chlorine residual after the final rinse cycle. Staff mentioned that they were using the dishwasher but the manager claimed that he was aware that the dishwasher was broken.
Corrective Action(s): Use the 3-compartment sink for ware washing. The sanitizer sink was set up with 200 ppm QUATS. Have the dishwasher repaired. Date to be corrected by: July 21, 2021

Observation: Rodent droppings were noted under the shelving unit between preparation counters. The area was cluttered with non-food items.
Corrective Action(s): Remove all excess items and organize the shelving area. Thoroughly clean the rodent droppings on the floor. Clean and disinfect the area with 1000 ppm chlorine residual solution. Monitor pest activity to ensure food is protected from contamination at all times. Date to be corrected by: July 21, 2021

Observation: There was a build up of food debris under counters and hard to reach areas.
Corrective Action(s): Thoroughly clean the facility - particularly hard to reach areas. Food on the floor can attract pests and encourage harbourage. Maintain a log for deep cleaning to ensure the facility is maintained in a good sanitary condition. Date to be corrected by: July 21, 2021

Observation: The cutting boards at the back preparation area were extremely worn out. The cuts and scratches on the boards were visibly black from food accumulation.
Corrective Action(s): Replace or resurface the cutting boards. All food contact surfaces must be smooth and easy to clean. Date to be corrected by: July 26, 2021

Comments

Routine inspection conducted.

Temperatures:
- Walk-in cooler was at -1C.
- Walk-in freezer was at -24C.
- Chest freezer was at -21C.
- Retail coolers were at or below 4C.
- Retail freezers were at or below -18C.

All coolers had accurate thermometers.

Sanitation:
- Hand washing sink was adequately equipped with hot/cold running water, liquid soap, and disposable paper towels.
- Sanitizer dispenser dispensed 200 ppm QUATS solution. Test strips were available on site.
- Sanitizer pail was labelled and had 200 ppm QUATS. Staff was observed re-filling the pails at the time of inspection.
- Knives were in good sanitary condition and stored on a magnetic strip.
- The ventilation hood was in satisfactory sanitary condition.
- 3-compartment sinks (2) had plugs.

Storage:
- Dry ingredients are stored in pest proof containers.
- Rice and noodle bags were stored on shelves under the counters.
- All food was stored off the floor.

Pest Control:
- Facility is monitored by a professional pest control company. Operator was asked to email a copy of the most recent pest control report to the inspector.

- Staff and supervisor have valid Food Safe level 1 certification. Certificates are posted on the wall with the permit.
- Permit is posted.
- Temperature logs are up to date.
