302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. No chlorine was detected in rinse residual for low temperature dishwasher. A small amount of sanitizer was observed in the dishwasher sanitizer concentrate container.
2. Quaternary ammonium compounds (quats) in the kitchen spray bottle was measured at less than 100 ppm quats.
Corrective Action(s): 1. Dishwasher sanitizer concentrate container was changed and dishwasher was primed. At least 50 ppm chlorine was detected in rinse residual at 39 degrees C. Ensure that dishwasher is being checked daily to ensure that sanitizer is available in the rinse residual at the correct concentration (e.g. 50 ppm chlorine). Chlorine test strips are available.
2. Spray bottle was emptied and quats was refilled from the dispenser at 200 ppm. Ensure that quats sanitizer is maintained at concentrations required for effective sanitizing of food contact surfaces (e.g. 200 ppm quats). Monitor and change sanitizer as often as needed to meet this requirement.

Observation (CORRECTED DURING INSPECTION): Only kitchen hand washing station had no cold water at time of inspection.
Corrective Action(s): This is a repeat violation. Cold water valve was opened at time of inspection to provide cold water at the faucet. Ensure that at all times, all hand washing stations are provided with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper hand washing.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The following was observed:
1. A build up of dust observed on ceiling panels and light fixture covers within kitchen, as well as on the fan cover of the walk in cooler.
2. Debris observed on floor underneath and behind both preparation coolers.
3. Debris observed on door seals of right preparation cooler and on bottom of glass cooler, including bottom track for sliding glass doors.
Corrective Action(s): Ensure that the above noted areas are properly cleaned. Food debris may potentially attract pest activity and food debris / dust may potentially contaminate food items and/or food contact surfaces. February 19, 2019.

Observation: Cold water faucet is leaking (dripping).
Corrective Action(s): Have cold water faucet repaired or replaced so that there are no leaks present. Hand washing station must be fully functional and equipped with hot and cold running water, liquid hand soap, and single use paper towels. March 12, 2019.

Observation (CORRECTED DURING INSPECTION): Spray bottle containing quats sanitizer was unlabeled.
Corrective Action(s): Bottle labeled at time of inspection. Ensure that all chemicals, cleansers, and similar agents are properly labeled to prevent accidental mixing or misuse.

- Coolers at 4 degrees C or less. Food is covered and well organized.
- Internal temperature of cooled food items measured at 4 degrees C or less.
- Reach-in freezer at -18 degrees C or less.
- No hot holding at time of inspection. No buffet at time of inspection.
- Cold holding units equipped with thermometers. A probe thermometer is available on site for internal temperature checks.
- Ice machine and bin in sanitary condition. Ice scoops stored in container outside of ice machine.
- Quaternary ammonium compounds (quats) sanitizer available in labeled spray bottle at bar at 200 ppm
- Hand washing station (bar) is unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
