Comments

Routine inspection conducted. Facility is well maintained and operated. The following observations were made:

1. Temperatures - All temperatures meet health requirements
- Freezer units, including all stand-up freezers, at -18C or below
- Upper compartment of domestic refrigeration unit at -18C
- Lower compartment of domestic cooler at 4C
- Front beverage cooler at 2C
- Prep cooler and cooling wells at 2C. Lid remains closed when not in use - excellent
- Walk-in cooler (left) at 4C or less
- Walk-in cooler (right) at 4C or less
- No hot-holding conducted at time of inspection. Display unit at front-of-house is not in use

2. Hygiene and Sanitizing
- Restroom for employees and restroom for customers well maintained
- Handwash stations all adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Bleach sanitizer pail at 200 ppm chlorine residual
- Utensils, ladles, and all washed equipment in dishpit area maintained in sanitary condition
- Low temperature dishwasher releases 100 ppm chlorine residual at final rinse cycle - good. Chlorine test strips available for verification

3. Storage
- All food items elevated off the floor
- Dough and prepared food products are stored with food-grade containers with tight-fitting lids
- Bulk storage items, including sugar, chickpeas, mixed whole wheat flour are stored in secure containers. Handle of scoop kept out of food products

4. Pest Control & Sanitary Maintenance
- No visible signs of pest activity at time of inspection
- Facility is kept in good sanitary condition. Ceiling panels and lights are intact, all exposed bulbs covered with protective covering
- Ventilation slats / cook line are well maintained
- Dishpit area is well maintained and free of accumulating debris or grime

5. Recommendations
- Small hole observed in screen door - please patch this up to prevent entry of pests such as flies or small rodents
- Remove all discarded / used equipment from back receiving area to eliminate clutter outside

6. FoodSafe
**FoodSafe 1 certificate was acquired on January 2013 and has since expired on August 31, 2018. Renew at www.foodsafe.ca and email temporary certificate to the public health inspector by Sept 19, 2018
