Observation: Observed rodent droppings around the walls behind the dishwasher. The facility had traps set up in the kitchen. The owner noted that they block the bottom of the backdoor with a sturdy pad before leaving.
Corrective Action(s): Clean and sanitize the areas where droppings are found. The backdoor shall be installed with a door sweep to prevent pest entry.

Comments

- Handsinks maintained with hot & cold running water, liquid soap and paper towel
- 100ppm chlorine sanitizer present
- Low temp dishwasher dispensed 50ppm chlorine at final rinse cycle
- Hot holding items (rice, soup) were >60C
- Temperatures of refrigeration units were <4C for coolers and <-18C for freezers
- Rearrangement of the freezer is required. Raw meats shall be placed under all other food items to prevent cross-contamination.
- Deep cleaning is required in hard-to-reach areas (under shelves). Floor mats must be taken out to be thoroughly washed and sanitized.
- Keep monitoring for pest activities and clean as necessary. Food contact surfaces (counter tops) must be sanitized before operation.
