Coolers (large cooler, 2 door line cooler, and 1 door cooler) are all at 4 C or colder. Freezers - ok.
Temperature records are being kept.
Gelato is made on-site. All fruit (fresh mangoes, strawberries, etc.) is washed on site prior to processing.
No raw eggs. Pasteurized milk is used (stored at <<4C).
Hand washing sink in front service area has liquid soap and paper towels.
Back processing area - liquid soap and paper towels provided at sink.
Food handlers wear clean uniforms.
Scoops are separate for each flavour.
Ingredients are known (made on site).
Spray bottle with chlorine sanitizer is available (200ppm chlorine detected).
Gelato equipment is washed, rinsed, and sanitized using a chlorine sanitizer (follow directions on the label to create a 100-200ppm chlorine sanitizer sanitizing solution).
Commercial dishwasher has a final sanitizing rinse of 50ppm chlorine measured on the plate level.
Test strips are used to verify chlorine concentration.
Operator has updated Food Safe and has a valid certificate.
