Observation: 1. Observed a potato cutter and a tomato cutter stored away with dried food debris.
2. Observed clean utensils (e.g., measuring cup) stored on a tray with food debris.
Operator set aside above noted food contact surfaces to be cleaned and sanitized again.
Corrective Action(s): Clean and sanitize above noted food contact surfaces. Do not store away any food contact surfaces unless they are cleaned and sanitized. Do not store food contact surfaces with food debris.

Observation: Observed a bag of rice in its original packaging. Operator claims the bag was opened just today.
Corrective Action(s): Ensure all open bags of foods are transferred to a food grade container with an adequate cover (e.g., plastic wrap, tight fitting lids, etc.) to discourage attraction of pest.
Correct this by: Immediately.

Observation: Sanitation improvement required for the following areas, but not limited to:
- walk in cooler floor (especially hard to reach areas near the wall, and near the shelve legs)
- under the table in the back (observed raw potatoes and other food debris)
- juice/drink concentrate spilled under the drink concentrate storage wrack.
- spill behind the grill (looks like melted butter)
Corrective Action(s): Clean and sanitize above noted areas.

Hygiene and Sanitizing
- Hand washing station (s) equipped with hot and cold running water, liquid soap and paper towels
- QUATS sanitizer noted at 200ppm as per test strips. Test strips available on site
- In-use utensils stored in a sanitary manner
- In-use wiping cloths stored in a sanitizing solution
- Staff demonstrates good hygiene (clean hats and aprons worn)

Temperature (Maximum 4°C for coolers and -18°C for freezers, minimum 60°C for hot holding)
- Temperature of coolers noted at 4°C or lower
- Temperature of hot holding units noted at 60°C or higher
- Accurate thermometers available in every refrigeration units and hot holding units

Pest
- Pest control in place; serviced every month.
- No evidence of recent pest activity at the time of inspection.

Storage
- Dry storage is adequate. All goods maintained off the floor >15cm.
- Single-use take out containers in their original packaging to protect from contamination
- Chemical stored in a separate area away from food.

Administrative
- Health permit posted in a conspicuous location and up-to-date
- Staff with FoodSafe Level 1 on site.
