Observation (CORRECTED DURING INSPECTION): An employee was seen manually sanitizing dishes by quickly dipping dishes into sanitizer solution (for 1-2 seconds).
Corrective Action(s): To allow for adequate contact time, all dishes must be fully submereged in sanitizer solution for at least 30 seconds.

- All hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels
- Quats sanitizer solution available at 200 ppm in buckets and in sanitizing compartment of 3-compartment sink
- Test strips available for monitoring concentration of sanitizer
- Walk-in cooler, undercounter coolers and inserts were measured to be at 4C or colder
- Undercounter freezer measured to be at -18C
- Hot held items were held at 60C or hotter
- Temperature records well maintained and up to date
- Additional temperature record keeping for sour cream and guacamole held at room temperature available for review - good.
- Accurate thermometers available
- Food storage practices satisfactory
