Observation: Debris and grease buildup noted on the floor below prep table and equipment, along the baseboard, in the harder to reach area.
Dust and debris noted along the coil of the dish sink sprayer.
Corrective Action(s): Clean and sanitize the abovementioned areas and maintain in a sanitary condition at all time.

Routine inspection conducted today:
All handwash stations, including staff washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
All food stored protected and off the floor - excellent.
All utensils and food contact equipment noted sanitary and in good condition.
As per Manager, whenever the restaurant gets busy they will turn on the timer to track when the in-use utensils are to be cleaned and sanitized. Please follow your Sanitation Plan and clean as needed. All in-use utensils must be cleaned and sanitized at a minimum every 4 hours or whenever noted overly soiled.
3 sanitizer buckets noted throughout the prep area - 200 PPM QUAT detected in all buckets. 400 PPM QUAT detected from the wall mounted sanitizer.
High temperature dish machine was able to reach 88.0C at the rinse temperature gauge and 73.6C at the plate level during the rinse cycle.
No signs of pest noted during the inspection.
