Hot holding today is at >140F (soups, hot rice).
Food covered and date labeled in walk in.
***Discussed storage of washed lettuce. Do not overstock in cooler.
Most produce is pre-washed or washed in sanitized prep sink. Discussed.
Hand washing sinks have hot/cold water, liquid soap, and paper towels indispensers (including bar and staff washroom).
Quats sanitizer - 200ppm. Wiping cloths are stored in sani bucket and sanitizing solution changed frequently.
Utensils used continously are stored in ice water or in hot water (temp >140F). Utensils are washed, rinsed, sanitized every 4 hours (as per Mgr).
Commercial dishwasher has a final chlorine sanitizing rinse (>50ppm).
Glassware washer - has a final sanitizing rinse (warm water) of 100ppm.
Cleaning - satisfactory.
Food Safe trained manager and staff on site today.
Food Safety Plan and temperature records available.
