Observation (CORRECTED DURING INSPECTION): No QUATS sanitizer prepared during time of inspection. Staff prepared QUATS sanitizer spray during the time of inspection which measured at 200 ppm QUATS concentration.
Corrective Action(s): Ensure sanitizer is always available to adequately sanitize food contact surfaces, equipment and utensils throughout the day (as per approved sanitation plan) and to prevent microbial survival and foodborne illness. Ensure surfaces are cleaned and sanitized frequently and that solution is prepared fresh daily.

Observation (CORRECTED DURING INSPECTION):
Repeat Violation. 2 opened cans of pineapple observed in pizza preparation cooler. Cans were voluntarily discarded by staff during the time of inspection.
Corrective Action(s): Opened cans of food can potentially chemically contaminate the food (chemical leaching). Ensure all opened cans of foods are transferred to food safe containers and refrigerated at 4C or lower or discarded after opened to prevent chemical contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: Repeat violation. Fruit flies observed in the pizza prep area beside the preparation cooler. Staff mentioned that pest control will be coming to place traps.
Corrective Action(s): Ensures sticky traps are installed and that all food is covered and protected from contamination from flies.

Follow-up Inspection Conducted

Observations:
- Handwashing stations (x2) in kitchen are adequately supplied with soap, paper towel, hot and cold running water
- Dishwasher has been repaired. Chlorine residual of 100ppm measured at plate surface.
- 3-compartment sink available with drain plugs and QUATS sanitizer.
- Light in the storage room has been repaired and is adequate
- Walk-in cooler is observed organized, raw meats are stored away from ready-to-eat foods
- General sanitation of premises has been improved

NOTE: restaurant is take-out only right now (only using single-use containers)
