A routine inspection was completed:
- Coolers 4C; freezers -21C; hot holding units above 60C; and thermometers present.
- Hand washing sink stocked with liquid soap, paper towels, and running hot and cold water.
- Low temperature dishwasher had a [Cl2] between 50-100ppm during the rinse cycle. Test strips present and tested every morning.
- Wiping cloths stored in buckets of bleach sanitizer, [Cl2] was 200ppm. Ensure to change this solution every 2-3 hours.
- Foods stored in food grade containers, covered, foods stored in groups with raw proteins separate and/or below RTE foods; and foods stored 6" off the floor on shelves, racks, or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- Valid, FoodSafe certified staff present.
- General sanitation level is adequate, but improvement needed in the mentioned area.
- No signs of pests.
- Exhaust canopy and filters are clean. Ensure to schedule a professional cleaning in April 2024, as per sticker.
ACTION
Minor structural improvements being done in the front service area by the buffet tables (not in use). Floor is being replace; walls will be finished/sealed with a new coat of paint or wallpaper. Work not completed yet due to supply shortage and contractors.
Increase the frequency detailed cleaning is done to shelves storing dry ingredients and the shelving units in the dry storage room.
Replace the cold water cartridge for the hand washing sink, so it can be completely turned off. |
