Observation (CORRECTED DURING INSPECTION): 1) Sprouts observed stored on the counter in water with no ice present.
2) Two door under counter cooler found at 9C, this must be able to maintain 4C or less at all times. Ice build up seen on cooling coil on inside and large dust build up on cooler/compressor on outside
Corrective Action(s): 1) Sprouts must be kept at 4C or less at all times, ice must be always be topped up and clearly visible for there to be enough to keep sprouts cold enough. Keep sprouts always topped up with ice.
2) All foods needing refrigeration moved to an alternate cooler during inspection.

Observation (CORRECTED DURING INSPECTION): Observed staff washing dishes (knife, squeeze bottles and cups) in the hand wash station in the waitressing station. This sink is for hand washing ONLY.
Corrective Action(s): From now on, all dishes must be washed through the dishwasher in the back.

Observation: Hand wash station left of the line cooler in main kitchen did not have any soap.
Corrective Action(s): Soap replaced during inspection. Always keep liquid soap and paper towel at all hand wash stations.

Observation: Observed raw salmon roe intact with other organs in back three door freezer and several bags of salmon steaks in the walk in freezer. Operator stated that the salmon was obtained from a friend and was only for personal use. Reviewed menu and no products containing salmon are served. Food that is intended for personal use cannot be stored on site.
Corrective Action(s): Remove all salmon parts from premises today and do not store any foods intended for personal use on site.

2) Pipe under hand wash station in kitchen opposite deep fryer was leaking
