Observation: Mouse droppings found underneath equipment and along walls in the kitchen. Pest control is coming on site regularly, reports reviewed during the inspection.
Corrective Action(s): a) Clean all mouse droppings with a bleach solution within one day.
b) Install door sweeps on the front and back doors.

Comments

-Ensure that all food that is prepackaged and is outside of the deli area has a label that contains the following information: The store's name and contact information, the ingredients, and the quantity.
-The operator intends to add a deep fryer to the kitchen. Ensure that it can fit underneath the existing ventilation hood and that an updated Food Safety Plan is submitted for any new food items.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60C.
Bleach sanitizer was at 100 ppm.
Hand sinks are supplied with hot and cold water, soap and paper towels.
Meat cutting equipment were clean.
