Corrective Action(s): Do not use hot case for reheating - you must put samosas in the oven for reheating prior to putting in the hot case. Samosas were removed from the hot case and put into the oven Violation Score: 15

Comments

Hot holding case now has thermometer, but it is measuring 50C. Case requires repair at front where joints need sealing. This is to be repaired this weekend. Ensure that hot case is able to maintain 60C at all times. Discussed chicken breading station - please update or provided food safety plan for what you are doing with breading station.
