Observation (CORRECTED DURING INSPECTION): Insert of cooked rice was stored at room temperature. Internal temperature measured 11°C.
Corrective Action(s): Ensure cold foods are stored in cooler at ≤ 4°C until they are used. Operator voluntarily discarded the rice.

Observation (CORRECTED DURING INSPECTION): Several inserts of hot foods were stored outside of the hot holding unit. Internal temperature measured between 50-60°C.
Corrective Action(s): Store all hot foods inside hot holding unit at ≥ 60°C. Ensure amount of hot holding space is enough to hot hold the amount of food served. Do not rotate hot foods from hot holding unit to room temperature. Operator voluntarily discarded 1 insert of food due to lack of adequate hot holding.

Observation (CORRECTED DURING INSPECTION): Hand washing station was obstructed by equipment. Paper towels were not available in the dispenser.
Corrective Action(s): Remove equipment and provide paper towels. Ensure hand washing stations are always accessible and fully equipped.
